In a blender, combine the fruit, cottage cheese, sugar, lemon juice, and vanilla extract. Process until very smooth.

About one-third of the churned ice cream should be transferred to a freezer-safe container before assembling the ice cream.

This will be a VERY firm ice cream after a few hours in the freezer because of the very low fat content. It will need to sit at room temperature for a considerable amount of time (at least 20 to 30 minutes) before you can scoop it.

I suggest removing the ice cream from the freezer approximately thirty minutes prior to serving time. The wait will be worthwhile if you are patient. I swear.
